Double Chocolate Chunk Cookies

Ingredients
Makes 16
- 200 g Butter, at room temperature.
- 50 g Caster Sugar.
- 100 g Muscovado Sugar.
- 2 tsp Vanilla Extract.
- 1 Egg, beaten.
- 275 g Plain Flour.
- 4 tablespoon of Cocoa Powder.
- 1 teaspoon of Baking Powder.
- 75 g Halzelnuts.
- 200 g White Chocolate, broken into squares.
Method
- Preheat the oven to 160C / 325F / Gas 3. Line two baking sheets with greaseproof paper.
- In a bowl, beat the butter, sugars and vanilla extract until pale and fluffy, then beat in the egg.
- Sift in the flour, cocoa powder and baking powder, then stir in the nuts and chocolate until the mixture binds together.
- Divide the mixture into 16 equal portions, shape into balls and space them out evenly on the prepared baking sheets ; flatten slightly using the back of a spoon.
- Bake for 12 mins until the cookies are just set round the edges, but the centres still fell soft. Remove from the oven and cool for 5 mins, then transfer to a wire rack to cool completeley
