Double Chocolate Chunk Cookies

Makes 16

  • 200 g Butter, at room temperature.
  • 50 g Caster Sugar.
  • 100 g Muscovado Sugar.
  • 2 tsp Vanilla Extract.
  • 1 Egg, beaten.
  • 275 g Plain Flour.
  • 4 tablespoon of Cocoa Powder.
  • 1 teaspoon of Baking Powder.
  • 75 g Halzelnuts.
  • 200 g White Chocolate, broken into squares.

Method

  1. Preheat the oven to 160C / 325F / Gas 3. Line two baking sheets with greaseproof paper.
  2. In a bowl, beat the butter, sugars and vanilla extract until pale and fluffy, then beat in the egg.
  3. Sift in the flour, cocoa powder and baking powder, then stir in the nuts and chocolate until the mixture binds together.
  4. Divide the mixture into 16 equal portions, shape into balls and space them out evenly on the prepared baking sheets ; flatten slightly using the back of a spoon.
  5. Bake for 12 mins until the cookies are just set round the edges, but the centres still fell soft. Remove from the oven and cool for 5 mins, then transfer to a wire rack to cool completeley
