Duck on Stilton Mash and Port Gravy

Ingredients

Serves 4

Mash

  • 900g Potatoes cut into chunks
  • Milk
  • Butter
  • 40g Stilton Cheese , crumbled
  • 1 tablespoon of Chopped Chives

Duck

  • 8 Slices of Streaky Bacon
  • Butter
  • 1 Duck Breast fillet per person
  • 100 ml Red Wine
  • 50 - 100 ml Port
  • 1 Clove Garlic
  • Fresh Thyme
  • 100 ml Chicken Stock
  • 1 tablespoon of Cornflour with 1 tablespoon Water
  • Salt and Pepper

Method

  1. Make the mash and keep it warm
  2. cook the bacon on the grill for 10 min. until crispy
  3. Melt the butter in a frying pan, score the breast and fry them skin-side down for 10 min. until golden. Turn and cook for another 5 - 15 min. Remove from the pan and keep warm.
  4. Discard the fat from the pan and deglaze with the red wine and port. Add the garlic ant thyme and boil, reducing by half. Add the chicken stock and cornflour and simmer to thicken. Season and pass through a sieve.
  5. Serve the mash. Place the duck on it with a rasher on the top and spoon the sauce round.
