Honey Madeira Cake

Serves 8

Ingredients

  • 150 g Butter.
  • 100 g set Honey.
  • 75 g Caster Sugar.
  • 1 teaspoon of grated Lemon zest.
  • 3 Eggs.
  • 250 g Self-Raising Flour.

To Glaze

  • 3 tablespoons of clear Honey.
  • 2 tablespoons of toasted chopped Almonds.

Method

  1. Preheat the oven to 180C / 350F / gas 4. Grease and line a 2 lb loaf tin. Cream the butter with the honey and sugar until pale and fluffy. Mix in the lemon rind then gradually beat in the eggs. Add a little flour to prevent the mixture from curdling.
  2. Gradually add the rest of the flour. Transfer to the loaf tin. Bake for one hour.
  3. Cool on a wire rack. Warm the clear honey and make holes in the cake with a skewer. Drizzle over the warm honey and toasted chopped almonds.
