New Orleans Bread Pudding

Ingredients

  • 3 large Eggs.
  • 175 g Caster Sugar.
  • 1.5 teaspoon natural Vanilla extract.
  • 1.5 teaspoon ground Cinnamon.
  • 1 teaspoon ground Nutmeg.
  • 500 ml Milk.
  • 50 g Butter.
  • 250 g stale White Bread with crust, cubed.
  • 75 g Raisins.
  • 100 g roughly chopped Pecans.

Method

  1. Whisk the eggs, sugar and flavourings together until frothy.
  2. Warm the milk with the butter until the butter has melted then pour over the eggs and mix well.
  3. Mix the bread, raisins and pecans in a 1.8 l ovenproof dish. Pour the mixture over. Soak for 45 mins, stirring occasionally.
  4. Preheat the oven to 180C / 250F / Gas 4 and cook in the centre of the oven for 45 mins until risen and golden on top. Serve with cream.
