New Orleans Bread Pudding

Ingredients
- 3 large Eggs.
- 175 g Caster Sugar.
- 1.5 teaspoon natural Vanilla extract.
- 1.5 teaspoon ground Cinnamon.
- 1 teaspoon ground Nutmeg.
- 500 ml Milk.
- 50 g Butter.
- 250 g stale White Bread with crust, cubed.
- 75 g Raisins.
- 100 g roughly chopped Pecans.
Method
- Whisk the eggs, sugar and flavourings together until frothy.
- Warm the milk with the butter until the butter has melted then pour over the eggs and mix well.
- Mix the bread, raisins and pecans in a 1.8 l ovenproof dish. Pour the mixture over. Soak for 45 mins, stirring occasionally.
- Preheat the oven to 180C / 250F / Gas 4 and cook in the centre of the oven for 45 mins until risen and golden on top. Serve with cream.
